| My 7th Grade Home Economics Class Coffee Cake recipe: Preheat oven to 400 degrees F. Baking time is 15 - 20 minutes Mix in a bowl - whisk together: | |
| 3/4 c. | sugar |
| 1/4 c. | oil |
| 1 | egg |
| 1/2 c. | milk |
| Sift together and stir in: (I never sifted) 1 & 1/2 c. flour | |
| 2 tsp. | baking powder |
| 1/2 tsp. | salt |
| Place in a buttered, (or spray the baking dish/pan) with Pam), & floured 8 x 8 pan. Top with: (I got to where I doubled this topping) | |
| 1/4 c. | sugar |
| 2 tbsp. | flour |
| 2 tbsp. | butter |
| 1 tsp. | cinnamon |
Mix well & sprinkle over the top of the cake.
